This is not a big fluffy cake, this is a short, dense cake that does well with a tall glass of iced suntea and a wedge or lime, or a slushy margarita, or even a nice cuppa tea. Milk could theoretically be served with it as well, but that might be a dairy overload.
Just know that it won’t bake up much, so if you’re looking for a tall cake, make it in a smaller pan. I happen to like a short, dense pound cake that isn’t 4″ tall. This way I get to have two slice and think that they’re really just one.

cake ingredients
2 sticks of butter, cut into tablespoon sized piece
1 c sugar
zest of 4 limes
1/4 tsp salt (3/4 tsp if you use unsalted butter)
1 c cake flour
1 c all-purpose flour
1 1/4 tsp baking powder
4 eggs
1/4 c milk
1 heaping tsp vanilla paste (or regular vanilla, or a whole vanilla bean, scraped)
1/4 c + 2 Tbl lime juice (or just eyeball it and really juice the heck out of those 4 limes)

- Preheat the oven to 350F
- Cream the butter and sugar with the salt and lime zest
- Butter and flour a 9″ tube pan or 3 small loaf pans
- Combine the dry ingredients (flours and baking powder) on a paper plate or wax paper
- Lightly beat the eggs and milk in a bowl or measuring cup with a pour spout
- Add the lime juice and vanilla to the creamed butter, stir to combine
- In three (3) batches, add 1/3 of the flour and 1/3 of the eggs, stirring to combine with each addition
- Scrape down the sides of the bowl and beat the batter for another 15-20 seconds
- Spoon the batter, as evenly as possible, into your prepared pan(s)
- Bake for 45-50 minutes, until lightly browned on top and a toothpick comes out clean
- Cool for at least 10 minutes before removing the springform or de-panning the cake
chocolate drizzle ingredientsÂ
4 oz chocolate
1 1/2 Tbl butter
1 Tbl half and half
1 Tbl light corn syrup
pinch of salt

- Combine all of the ingredients in a double boiler over medium low heat (you don’t want the water to simmer, just steam)
- Stir to combine until everything is melted, glossy, and even looking
- Serve warm or reheat by submerging your storage container in warm water
